You’ll have lots more time for camping fun if you make some of your treats ahead of time and this tasty recipe is a good one to start with.
Crunchy Homemade Pumpkin Granola
You’ll be combining some warm, earthy spices for this such as cinnamon, nutmeg, ginger, and allspice. Add some pumpkin seeds which you’ve candied with butter, honey, and brown sugar. Toss it together with oats, some maple syrup, coconut oil, and a little salt. Then it bakes to perfection and you have to wait patiently before you can eat it.
Creamy Pumpkin Fudge
You can let go of half the guilt when you know you’re eating lots of fiber and vitamin A in this delicious fudge. Grab some pecans, olive oil, brown sugar, evaporated milk, pureed pumpkin, corn syrup, chocolate chips, marshmallow cream, vanilla and some spices. It only takes minutes to cook and can be wrapped to bring along on your camping trip.
Pumpkin Chicken Bites
These chicken nuggets will taste great and ramp up the nutrients your kids have for dinner. You’ll be boiling and mashing real pumpkin flesh until it’s mushy like mashed potatoes. You’ll use it as a dredge for your chicken pieces just before you dip them in bread crumbs. It works a charm to hold everything together and forms a wonderful crunchy crust around the nugget. The kids will be asking for more so you better make a double batch.
Enjoy the Fall root vegetables as they ripen for the season. They are flavorful, nutritious, and a nice departure from the usual menu items we eat during the summer.
